Almond Truffles

Soak lots of almonds, as many as you like, then dip them in warm water and pop the skins off. Put them in the food processor, with a generous amount of carob powder to flavour them. Taste to balance the carob and almond flavours Enhance with a few drops of vanilla essence, and sweeten with Stevia essence if you are avoiding sugar or honey if you prefer.
