Sunflower Greens with minty peas and spicy radish

Defrost your peas if frozen or reconstititute them in a little spring water overnight if they were dried.
Blend them to the consistency of a thick pouring sauce, then add lots of finely chopped mint to the blender and blend briefly again.
The fresh flavour of garden peas, spiked by mint, makes a delicious contrast with the juicy sunflower greens. Add a few spicy red radish sprouts for a hot touch.
